Same day loaded focaccia
Cooking time: 5+ hours
Serves: 6+
โIngredients:

2 and a half cups of warm water

2 teaspoons honey
-
2 teaspoons yeast
-
5 cups of plain flour
-
1 tablespoon of chilli salt (+ extra for topping)

A few good dashes of olive oil
-
1 cup your favourite marinara sauce
-
1 ½ cups mozzarella
-
1 cup pepperoni
-

โmethod:

Add warm water, honey and yeast in a large bowl and leave to activate. This should be about 10ish minutes. You will know when it’s ready once the mixture is foamy and has bubbles.

Then add your flour and salt and combine with your hands until just mixed.

Place into a large bowl that has been oiled and turn it over until the mix is coated in the oil.

Cover with a tea towel and leave in a warm spot in your kitchen for 3+ hours.

Grab a large baking tray and line with baking paper and more olive oil.

Pour in your dough and allow to rest for another 1.5 hours.

Now time to dimple your dough! Add some olive oil to the top of the dough before you do this otherwise it will stick to your fingers.

Bake in the oven on 190 degrees for around 25 minutes or until it is nice and golden brown.

Finally top with whatever ingredients you like! This time I’ve gone for a pizza style focaccia and have used marinara sauce, fresh mozzarella, pepperoni, hot honey and a homemade basil and garlic oil.
